Rachel Elizabeth’s 4-Ingredient Pancakes

You’ve heard of pro­tein pan­cakes, and you’ve prob­a­bly made a few ver­sions that call for pro­tein pow­ders (I’m sorry for those of you who have)…but today I offer you a gluten-free, REAL-FOODS replace­ment with only FOUR ingre­di­ents, that takes hardly any time at all to make!

It’s true — My pro­tein pan­cakes taste amaz­ing (like actual pan­cakes) AND you can make them in a sin­gle serve blender like the Magic Bullet!

This recipe makes one big serv­ing. It’s per­fect for four reasons:

  1. Made from only 4 REAL FOOD (no sup­ple­ment pow­ders) ingredients
  2. Excel­lent clean, fill­ing break­fast option with plenty of protein.
  3. Excel­lent post-workout meal (I can’t tell you how many times I’ve craved these dur­ring a work­out know­ing I could run home and whip them up and NOT be cheat­ing a clean diet!)
  4. If you’re like me and accept that you have an “inner fat-kid” who loves big por­tions and carbs, you’ll love this recipe! It makes one serv­ing, but one serv­ing makes a LOT of pan­cakes! Pile ‘em high, and enjoy!

INGREDIENTS:

  • 1/2 c gluten-free Old Fash­ioned Oats (nor­mally, oats are gluten free, but be sure to check)
  • 4 egg whites
  • 1/2 c 2% (or less) Daisy (or another all nat­ural brand) cot­tage cheese
  • 1 tsp pure vanilla extract (be sure there is no added corn syrup)
And we can’t for­get the syrup…but mea­sure it! It’s easy to go overboard!
  • 2 tsp 100% organic maple syrup

INSTRUCTIONS: SEE PHOTO FOR INDIVIDUAL STEPS (SO EASY)! Or see steps in text below…

  1. Pre­heat skil­let over medium heat
  2. In a sin­gle serv­ing blender (a reg­u­lar blender will work too) add egg whites.
  3. Add oats.
  4. Add cot­tage cheese
  5. Add vanilla extract
  6. BLEND & POUR into non-stick (or sprayed with non-stick spray) skil­let into pancakes.
  7. Flip when edges start to cook or turn golden (I check them as they cook)
  8. Driz­zle the 2 tsp of maple syrup over pan­cakes and ENJOY! :)

    Any ideas for those that don’t con­sume dairy?

    BTW the use of the Magic Bul­let is a great idea. Thanks for that inspiration.

      I won­der if unsweet­ened almond but­ter, thinned with a bit of water, could replace the cot­tage cheese…?

        Has any­one tried this option? I’m also non-dairy but would LOVE to try these!

          I have not tried this option but I can tell you that it com­pletely changes the macro-nutrients by basi­cally swap­ping pro­tein for fat, and while this may make a tasty alter­na­tive, they would no longer be “lean eat­ing”. The cot­tage cheese gives sub­stance and dou­bles the pro­tein to make these an amaz­ing source of energy from slow digest­ing com­plex carbs and an excel­lent source of pro­tein with very lit­tle fat. Per­fect for break­fast or even post work­out. You can, how­ever, buy hor­mone and lac­tose free cot­tage cheese, if you need to avoid that. Ill look into a dairy free ver­sion as I also try to avoid it (I’m a Lac­tard) but they’re just so good!!! :)

    A neat tip for those of those with­out Magic Bullets…a large sized Mason jar will screw into the base of most blender carafes.  Just screw the plas­tic col­lar off the base of the blender carafe and onto the open­ing of the jar. You have to flip the blender upside down to take the jar on and off, but I tend to be heavy-handed with the ingre­di­ents when I use the full-size carafe, so it’s worth the bother.
