Slow-cooker (CrockPot) Citrus-Parmesan Chicken with Brussels Sprouts
I just love how easy crock-pot cooking is! Throw ingredients in, cover, set timer and poof! Dinner’s ready by the time 6pm rolls around! If you like this recipe, be sure to check out my ‘Slow Cooker Chicken with Kale’ recipe!
10 min (or less)
6 hr 5 min (throw everything in the pot late morning – noonish, and it’s ready right on time for dinner at 5-6!)
- 1 whole chicken, 3 1/2 to 4 pounds
- Sea salt
- Ground black pepper
- Herb & Citrus rub by Summit Spice & Tea Co. (It’s a mix of thyme, orange peel, lemon peel, mexican oregano, fennel, basil, rosemary, sage and parsley.) – This is optional. If you can’t get it, just use about 1/2tsp of each of the spices and leave the ‘peels’ out. The fruits listed below will make up for their absence. :)
- 1/4-1/2c grated parmesan cheese (optional but yummy)
- 1c low sodium vegetable broth
- 1 med orange, sliced
- 1 lemon, juice
- 1 package brussel sprouts (pre cut/washed – I like Trader Joes bagged fresh produce variety)
- 4 teaspoons cornstarch (for the sauce, after the chicken’s cooked)
- Rinse the chicken both inside and out under cool running water. Pat dry.
- Season the chicken liberally both inside and out with salt and pepper.
- Place in a slow cooker with orange slices around the base.
- Squeeze lemon juice over the skin, and add broth.
- Cover evenly with parmesan cheese and spices.
- Fill the rest of the pot with brussels sprouts.
- Cover the slow cooker and set the temperature to high. Cook for 6 hours, undisturbed.

AFTER COOKING, BEFORE SERVING INSTRUCTIONS:
- Remove the chicken and sprouts from the slow cooker, and pour juices into a bowl.
- Skim the fat from the top and transfer the liquid to a small saucepan.
- Dissolve the cornstarch in another small bowl with 2 teaspoons of water and whisk to form a slurry.
- Whisk the slurry into the juices and bring to a boil over high heat.
- Cook until thickened, season with salt and pepper, and continue to cook an additional 4 to 5 minutes.
- Cut the chicken into pieces and serve with sprouts, with sauce ladled over the top.
If you have the ingredients, this recipe is honestly as simple as “toss ’em in the pot with the chicken, put the lid on, and press the start button”. Perfect for busy mom dinners!
