Slow-cooker/CrockPot Chicken with Kale and Veggies
This is such an unbelievably easy recipe. It’s almost fool-proof and it’s full of delicious and nutritious ingredients! I did adapt this recipe from “Slow Cooked Chicken” recipe by Emeril. I really just wanted to know how to use my crockpot to cook an entire chicken, so I found this recipe and made it my own with the ingredients I had in my fridge. You can do the same based on your taste! :)
Free of dairy, soy, sugar and gluten.
6 hr 5 min (throw everything in the pot late morning – noonish, and it’s ready right on time for dinner at 5-6!)
- 1 whole chicken, 3 1/2 to 4 pounds
- Sea salt
- Ground black pepper
- 1/2 medium yellow onion
- 1-2c coarsely chopped kale
- 1/2 c shredded carrots
- 1/2 package sliced crimini mushrooms (I used the whole package. I LOVE cooking with mushrooms.)
- 3-4 cloves garlic, peeled and smashed (Who doesn’t love garlic? I used 4 cloves.)
- 3 sprigs fresh thyme
- 1 tbls dried parsley
- 1 lemon, juiced/about 1/3 c lemon juice (and if you have it, I added about 1/2c low-sodium broth)
- 4 teaspoons cornstarch (for the sauce, after the chicken’s cooked)
- Rinse the chicken both inside and out under cool running water. Pat dry.
- Season the chicken liberally both inside and out with salt and pepper.
- Place in a slow cooker.
- Scatter the kale, veggies, spices and lemon juice over top of the chicken.
- Cover the slow cooker and set the temperature to high. Cook for 6 hours, undisturbed.
AFTER COOKING, BEFORE SERVING INSTRUCTIONS:
- Remove the chicken from the slow-cooker, and pour juices into a bowl.
- Skim the fat from the top and transfer the liquid to a small saucepan.
- Dissolve the cornstarch in another small bowl with 2 teaspoons of water and whisk to form a slurry.
- Whisk the slurry into the juices and bring to a boil over high heat.
- Cook until thickened, season with salt and pepper, and continue to cook an additional 4 to 5 minutes.
- Cut the chicken into pieces and serve, with sauce ladled over the top.
