Dear Taste Buds (and CF subscribers),
This week’s “Meals On Monday” Recipe was inspired by my VERY STRICT but VERY SUCCESSFUL physique competition dieting…but don’t worry, it was also inspired by my need for flavor in my food, and my love of Thai food!
This recipe I’m sharing is from Clean Eating Magazine (modified only slightly) and it’s diet and trainer approved!
NOTE: You have to be careful with ‘healthy’ or even ‘clean’ recipes sometimes. Just because it’s healthy and even clean, it can still be loaded with too many carbs and/or calories per serving size.
This recipe is wonderful though. It’s everything a clean (and lean) recipe should be, but without the taste bud torture! So wake up, you tired little taste buds! And say goodbye boring old boiled chicken! CLEAN THAI CHICKEN WITH LIME
- 1/3 c unsalted peanuts
- 1 1/2 T garlic powder
- 1 1/2 t ground ginger
- 1/2 lb boneless, skinless chicken breast (best to get free-range fresh, not frozen)
- 1 fresh lime, for juice
- fresh chopped cilantro
- Preheat oven to 400°F.
- In a mini food processor, grind peanuts until fine, but not to paste.
- In a small bowl, combine peanuts, garlic powder and ginger.
- Squeeze juice from lime over the chicken.
- Roll chicken in peanut mixture until well coated.
- Place chicken on a baking sheet.
- Bake for 20-25 minutes – Check at 20 min – Bake another 5 min if still pink.
- Top/sprinkle with fresh chopped cilantro and serve.
Pair with your favorite complex carbohydrate for a fueled morning or mid day meal, or veggies and a serving of healthy fat for a clean, lean and satisfying dinner. (See my DIY Meal Planner for more info on nutrient timing for a healthy, fueled, lean physique)
